Ever need an appetizer that makes everyone think you worked very hard when, in reality, the oven did most of the work? This Baked Brie with Figs is exactly that recipe.

A whole wheel of Brie is baked until warm and gloriously gooey, then topped with sweet fresh figs, rosemary, crunchy pistachios, and plenty of honey. It looks fancy enough for a holiday party but requires only a few minutes of actual effort.

Honestly, the hardest part is putting it on the table and pretending you are not going to stand next to it with a cracker until it’s gone.

This is one of those magical appetizer recipes where every ingredient brings something to the party. The Brie gives you the creamy, melty center. The figs are sweet and jammy. Rosemary adds an earthy note, the pistachios bring crunch, and honey ties everything together.

Ingredients You’ll Need

You really don’t need much to make a beautiful baked Brie:

  • A whole wheel of Brie cheese
  • Fresh Black Mission figs
  • Honey
  • Fresh rosemary
  • Roasted pistachios
  • Salt and pepper

Black Mission figs are wonderful here because they become soft and intensely sweet in the oven, but any ripe fresh figs will work.

And yes, leave the rind on the Brie. It is completely edible and, more importantly, it helps keep all that melted cheese from escaping before you get a cracker anywhere near it.

How to Make Baked Brie with Figs

The beauty of this recipe is how little you actually have to do.

Place the Brie on a parchment-lined baking sheet, add the rosemary and figs, season lightly, and drizzle everything with honey. Then pop it in the oven until the cheese is wonderfully soft in the center.

After baking, sprinkle the pistachios over the top and add another little drizzle of honey if your heart tells you to. Mine usually does.

Tips for Perfect Baked Brie

  • Keep the rind on the Brie, so the wheel holds its shape while baking.
  • Use ripe but firm figs, so they soften without completely falling apart.
  • Don’t overbake the Brie. You want it soft and molten inside, not running all over the baking sheet.
  • Add the pistachios after baking, so they stay crunchy.
  • Serve immediately while the center is warm and gooey.

You can usually tell the Brie is ready when the wheel feels soft when gently pressed in the center.

And once you cut into it, that’s when the fun begins. The cheese oozes out underneath those roasted figs and honey and suddenly everyone at the table forgets about personal space.

What to Serve with Baked Brie

You need something sturdy enough to scoop up all that melted cheese. A flimsy little cracker is no match for molten Brie. Trust me.

  • Toasted baguette slices
  • Crostini
  • Crackers
  • Breadsticks
  • Apple slices
  • Pear slices
  • Seeded crackers

I especially love adding apple or pear slices to the platter because the fresh fruit balances the rich cheese and honey beautifully.

Easy Variations

No fresh figs? Don’t abandon the Brie. This recipe is very forgiving.

  • Use sliced pears or apples instead of figs.
  • Substitute walnuts or pecans for pistachios.
  • Add a spoonful of fig preserves when fresh figs are out of season.
  • Use thyme instead of rosemary.
  • Add a few dried cranberries for a holiday version.
  • Finish with a tiny drizzle of balsamic glaze for extra tang.

Make Ahead Tips

You can assemble the Brie with the figs and rosemary a few hours ahead and keep it covered in the refrigerator. When you’re ready to serve, add the honey and bake.

I wouldn’t bake it too far in advance because baked Brie is absolutely at its best while warm and melty. This is not a dessert where patience is rewarded.

When to Serve Baked Brie with Figs

This appetizer is beautiful for Thanksgiving, Christmas, New Year’s Eve, cocktail parties, wine nights, birthdays, or date night.

It also works beautifully on a cheese board. Put the Brie in the center, surround it with fruit, crackers, nuts, and charcuterie, and suddenly you’ve become the person who “does gorgeous cheese boards.”

Ingredients

  • 1 wheel of brie cheese
  • 5-6 Black Mission Figs - halved or quartered
  • 1 Spring rosemary
  • 2 Tablespoons roasted Pistachios
  • Honey
  • Salt + Pepper

Instructions

  • Preheat oven to 375 degrees Fahrenheit
  • Line a sheet pan with parchment paper
  • Place the wheel of brie in the sheet pan
  • Top with 5-6 crushed rosemary leaves
  • Top with figs, salt, and pepper
  • Drizzle with honey
  • Bake for 20-22 minutes or until the cheese has softened
  • Remove from oven and sprinkle in pistachios
  • Add some more honey if needed
  • Enjoy!

Notes

  • Use a whole wheel of Brie and leave the rind on so it holds its shape while baking.
  • Black Mission figs work beautifully, but any ripe fresh figs may be used.
  • Add the pistachios after baking, so they stay crunchy.
  • Bake just until the Brie is soft and warm in the center. Avoid overbaking, or the cheese may split and leak.
  • Serve immediately with crackers, crostini, sliced baguette, or apple and pear slices.
  • For extra sweetness, drizzle additional honey over the Brie just before serving.
