Ingredients
1/2cupunsalted butter
1cupbrown sugar
2eggs
1egg yolk
1teaspoonvanilla extract
1cupall-purpose flour
1/2teaspoonbaking powder
1/8teaspoonbaking soda
1/2teaspoonsalt
1/4cupdulce de leche
2/3cupHeath toffee bits or butterscotch chips
Nonstick spray or parchment paper
Instructions
Preheat oven to 350°F.
Line an 8x8-inch baking pan with parchment paper or grease lightly with nonstick spray.
In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
In a saucepan over medium-low heat, melt the butter and continue cooking until golden brown and fragrant, stirring often. Do not burn.
Transfer browned butter to a mixing bowl and let cool for 2 minutes.
Add brown sugar and mix until combined.
Beat in eggs one at a time, then add egg yolk and vanilla extract.
Add dry ingredients and mix just until combined.
Fold in the toffee bits or butterscotch chips.
Spread half the batter into prepared pan.
Warm dulce de leche for 10-20 seconds in microwave until spreadable.
Spoon dulce de leche evenly over batter.
Top with remaining batter and gently spread to cover.
Bake for 28-32 minutes, until edges are set and center is slightly soft.
Cool in pan for at least 20 minutes before slicing.
Cut into squares and serve.
Notes
Do not overbake for chewy blondies.
Brown butter adds deep caramel flavor, worth the extra few minutes.
