6 oz cooked shrimp peeled, deveined, and diced very small 2 tablespoons onion minced 4 oz cream cheese softened 1/2 cup mayonnaise 1 teaspoon lemon juice 2-3 tablespoons fresh dill 2-3 tablespoons capers minced Salt and black pepper, to taste
In a bowl, combine shrimp and onion
In a separate bowl, combine the mayonnaise and cream cheese. Whisk together until smooth
Add the lemon juice, dill, capers, and salt
Add the dressing to the shrimp, mix well
Refrigerate for at least 1 hour to allow the flavors to develop. Stir again before serving.
Serve with crostini, crackers , or a variety of vegetables
Use fully cooked shrimp for this recipe. Small salad shrimp work especially well and save prep time.
For the best flavor, refrigerate the dip for at least 1 hour before serving.
Stir well before serving if made ahead.
Serve with crostini, crackers, pita chips, cucumber slices, celery sticks, or bell pepper strips.
Fresh dill gives the best flavor, but 1 tablespoon dried dill may be substituted if needed.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Do not freeze, as the texture of the cream cheese and mayonnaise may change after thawing.
