  • 2 cloves garlic chopped
  • 1 onion sliced
  • 2 carrots peeled and chopped
  • chopped Parsley
  • Olive Oil

For Polenta

  • 1/2 cup polenta/cornmeal
  • 1 cup milk
  • 1 cup water
  • Parmesan or Romano Cheese to taste
  • Salt and Pepper to taste

Instructions

  • Place the onions, garlic, carrots and bay leaf on the bottom of the crock pot. Sprinkle with Italian Seasoning
  • Chop meat in 2-3 pieces. Season with salt and pepper on every side
  • Heat a skillet over medium-high heat and add 1 tablespoon of olive oil
  • Sear the meat until browned on every side
  • When meat has been seared, remove from heat and add it to the crockpot
  • Reduce heat to medium and add the wine to the skillet. With a wooden spoon, scrape down the bottom of the pan to released the crunchy meat pieces. Add the tomato Sauce and mix with the wine. When sauce begins bubbling add it on top of the beef in the crock pot
  • Cook on low for 8 hours or on high for 4 hours
  • When time is up, remove the beef from crock pot and shred using 2 forks. Mix with the sauce and veggies
  • Sprinkle the parsley
  • For Polenta
  • In a pot, add the milk, water, cheese and salt. Cook on medium heat
  • When the liquid starts boiling, whisk in the cornmeal and continue whisking on medium- low heat for a few minutes until it becomes thick and creamy. Check for seasoning and add more cheese if desired

Notes

The beef can be frozen for months if desired
This dish can also be served with pasta instead of Polenta
