You must think I am crazy making these sort of dishes while it’s 100 degrees out here in Miami. Personally, I love and crave comfort food all year round. The beef is super flavorful and goes great when served with creamy polenta made with Parmesan cheese. Forget about ground beef, shredded slow cooked beef has much more deep flavor and texture. Best of all, this beef ragu can be frozen for future meals.

Ingredients
For Beef Ragu
  • 4 lbs beef roast I used bottom round roast
  • 1 tablespoon Italian seasoning
  • 1 jar pasta sauce
  • 2 Cups red Wine your favorite kind
  • 1 bay leaf
  • 2 cloves garlic chopped
  • 1 onion sliced
  • 2 carrots peeled and chopped
  • chopped Parsley
  • Olive Oil
For Polenta
  • 1/2 cup polenta/cornmeal
  • 1 cup milk
  • 1 cup water
  • Parmesan or Romano Cheese to taste
  • Salt and Pepper to taste
US Customary - Metric
Instructions
  1. Place the onions, garlic, carrots and bay leaf on the bottom of the crock pot. Sprinkle with Italian Seasoning
  2. Chop meat in 2-3 pieces. Season with salt and pepper on every side
  3. Heat a skillet over medium-high heat and add 1 tablespoon of olive oil
  4. Sear the meat until browned on every side
  5. When meat has been seared, remove from heat and add it to the crockpot
  6. Reduce heat to medium and add the wine to the skillet. With a wooden spoon, scrape down the bottom of the pan to released the crunchy meat pieces. Add the tomato Sauce and mix with the wine. When sauce begins bubbling add it on top of the beef in the crock pot
  7. Cook on low for 8 hours or on high for 4 hours
  8. When time is up, remove the beef from crock pot and shred using 2 forks. Mix with the sauce and veggies
  9. Sprinkle the parsley
  10. For Polenta
  11. In a pot, add the milk, water, cheese and salt. Cook on medium heat
  12. When the liquid starts boiling, whisk in the cornmeal and continue whisking on medium- low heat for a few minutes until it becomes thick and creamy. Check for seasoning and add more cheese if desired
Recipe Notes

The beef can be frozen for months if desired
This dish can also be served with pasta instead of Polenta
