Ingredients

  • 1/2 shallot
  • 1 clove garlic
  • 2 tbsp oil
  • 4 eggs
  • 2 egg whites
  • 3/4 cup heavy cream
  • 4 oz shredded cheese of choice I used mozzarella and provolone
  • 1/2 cup spinach chopped
  • 1/4 cup diced turkey or ham optional
  • salt/pepper to taste

Instructions

  • Preheat oven to 350 degrees
  • Spray an 8 or 9 inch pan dish and set aside
  • Heat oil and saute the shallot and garlic until tender. Let cool
  • In the meantime, in a bowl, whisk the 4 eggs, 2 egg whites, cream and the salt/pepper until combined Spoon the shallot and garlic mixture on the bottom of the dish and over that spread the shredded cheese, ham and spinach
  • Pour the egg mixture evenly on top of the spinach/cheese mixture. You may need to give it a quick stir with a fork, just to even it out
  • Bake for 40 or 45 minutes until the filling is set
  • Allow it to cool for 10 minutes
  • Enjoy
