Ingredients
1/2shallot
1clovegarlic
2tbspoil
4eggs
2egg whites
3/4cupheavy cream
4ozshredded cheese of choiceI used mozzarella and provolone
Heat oil and saute the shallot and garlic until tender. Let cool
In the meantime, in a bowl, whisk the 4 eggs, 2 egg whites, cream and the salt/pepper until combined Spoon the shallot and garlic mixture on the bottom of the dish and over that spread the shredded cheese, ham and spinach
Pour the egg mixture evenly on top of the spinach/cheese mixture. You may need to give it a quick stir with a fork, just to even it out
Bake for 40 or 45 minutes until the filling is set
