This easy to make Gluten Free Crustless Spinach Quiche is the perfect Sunday brunch recipe that can be customized to any taste.

The Quiche has so much flavor that you’ll not even notice the lack of crust. The fact that there’s no rolling or flour in the kitchen makes this recipe easy and ready in no time.

I don’t know about you but I LOVE brunch. Maybe it’s a good excuse to drink alcohol at noon or maybe it’s all those wonderful dishes that you only eat during brunch. Come on! Tell me where else can you eat a plate of pancakes and then not be embarrassed to ask for a chocolate cake for dessert? BRUNCH!

Crustless Spinach Quiche - This easy to make Gluten Free Crustless Spinach Quiche is the perfect Sunday brunch recipe that can be customized to any taste

Ingredients
  • 1/2 shallot
  • 1 clove garlic
  • 2 tbsp oil
  • 4 eggs
  • 2 egg whites
  • 3/4 cup heavy cream
  • 4 oz shredded cheese of choice I used mozzarella and provolone
  • 1/2 cup spinach chopped
  • 1/4 cup diced turkey or ham optional
  • salt/pepper to taste
Instructions
  1. Preheat oven to 350 degrees
  2. Spray an 8 or 9 inch pan dish and set aside
  3. Heat oil and saute the shallot and garlic until tender. Let cool
  4. In the meantime, in a bowl, whisk the 4 eggs, 2 egg whites, cream and the salt/pepper until combined Spoon the shallot and garlic mixture on the bottom of the dish and over that spread the shredded cheese, ham and spinach
  5. Pour the egg mixture evenly on top of the spinach/cheese mixture. You may need to give it a quick stir with a fork, just to even it out
  6. Bake for 40 or 45 minutes until the filling is set
  7. Allow it to cool for 10 minutes
  8. Enjoy
