For Crust 1/2 cup Unsalted Butter (1 stick) room temperature 1 cup All Purpose Flour 2 tablespoons Sugar 1/2 teaspoon Vanilla Extract For Filling 2 Eggs 2 teaspoons Orange Zest 3 tablespoons freshly squeezed orange juice about 1 orange 1 cup Sugar 1/4 teaspoon Salt 1/2 teaspoon Baking Powder Garnish 1/2 cup Powdered Sugar optional
For Crust Preheat oven to 350 Degrees Fahrenheit
Grease an 8×8″ baking pan and line with parchment paper. Leave enough paper so it overlaps the sides (for easy removal)
Place the butter, flour, sugar and vanilla on a big bowl. Using a mixer, whip the ingredients until combined
Line the bottom of the baking pan with the dough. Use your fingers to spread the crust all over the bottom
Bake for 20 minutes or until browned
For Filling In a bowl place the orange juice, zest, eggs, sugar, salt and baking powder. Whisk all ingredients together until mixed
Pour filing onto hot crust and bake for about 20-25 minutes or until filling is set
When ready remove from the oven and let it cool. Unmold from pan, cut into squares and dust with powdered sugar
