For Steak 2 lb Flank Steak Salt + Pepper For Mustard Sauce 1/2 cup Onions sliced (about 1/4 onion) 1 teaspoon Dijon Mustard 1/2 teaspoon Thyme can be dried 1/2 cup Beef Stock 1/4 cup White Wine Salt + Pepper 1 teaspoon Olive Oil
To Cook the beef:
Preheat the Broiler for 5 minutes
Place beef in a broiler rack and add salt + pepper on both sides
Cook for 3 minutes on one side, then turn and cook for 3 more minutes
To Make the Pan Sauce
While the beef is cooking, heat a saute pan over medium heat and add the olive oil
Cook the onions with a little salt and the thyme until softened
Add the wine, mustard, and stock and let it reduce over medium-low heat until thickened (do not let it dry)
