2 tablespoons almond flour 2 tablespoons granulated keto sweetener Swerve or Truvia 2 tablespoons unsweetened cocoa powder 1/2 teaspoon baking powder Pinch of salt 1 large egg 2 tablespoons butter melted and cooled slightly 1 tablespoon brewed coffee optional, enhances chocolate flavor 1 tablespoon sugar-free chocolate chips Nonstick spray
Lightly spray a large microwave-safe mug or ramekin with nonstick spray.
In a small bowl, whisk together the almond flour, keto sweetener, cocoa powder, baking powder, and salt.
Add the egg, melted butter, and brewed coffee. Whisk until smooth and no lumps remain.
Pour the batter into the prepared mug.
Microwave on high for 45 to 60 seconds, depending on your microwave. The cake should look set but still soft in the center. Do not overcook.
Immediately sprinkle the sugar-free chocolate chips on top and let them melt.
Cool for 1 minute before serving. Enjoy warm.
For extra richness, top with whipped cream.
If using coconut flour, use 2 teaspoons instead of almond flour.
Microwave times vary; start with less time and add more if needed.
Coffee is optional but deepens the chocolate flavor.
