Ingredients

  • 2 tablespoons almond flour
  • 2 tablespoons granulated keto sweetener Swerve or Truvia
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 large egg
  • 2 tablespoons butter melted and cooled slightly
  • 1 tablespoon brewed coffee optional, enhances chocolate flavor
  • 1 tablespoon sugar-free chocolate chips
  • Nonstick spray

Instructions

  • Lightly spray a large microwave-safe mug or ramekin with nonstick spray.
  • In a small bowl, whisk together the almond flour, keto sweetener, cocoa powder, baking powder, and salt.
  • Add the egg, melted butter, and brewed coffee. Whisk until smooth and no lumps remain.
  • Pour the batter into the prepared mug.
  • Microwave on high for 45 to 60 seconds, depending on your microwave. The cake should look set but still soft in the center. Do not overcook.
  • Immediately sprinkle the sugar-free chocolate chips on top and let them melt.
  • Cool for 1 minute before serving. Enjoy warm.

  • For extra richness, top with whipped cream.
  • If using coconut flour, use 2 teaspoons instead of almond flour.

    Good recipe but i think your carb count is a bit on thw hifg aide, 23 carbs? Does not sound right to me..
