Ingredients

  • 1 Lb Beef for Stew cubed
  • 1 clove Garlic crushed
  • 1 Onion sliced
  • 1 Cup Small Potatoes quartered
  • 2 Carrots sliced
  • 2 Bay Leaves
  • 2 Springs of Thyme
  • 1 Cup Peas frozen
  • 2-3 Tablespoons Olive Oil
  • Salt + Pepper
  • 14.9 oz Guinness Beer
  • 2 Cups Beef Stock
  • Chopped Parsley for garnish

Instructions

  • Dry meat on both sides using a paper towel
  • Sprinkle Salt and Pepper generously over the beef
  • In a skillet, heat 1 tablespoon of the oil and brown the pieces of beef. Work in batches to avoid overcrowding the pan. Add oil as needed between batches
  • Place the browned beef on the bottom of a slow cooker
  • Meanwhile heat 1 tablespoon of oil to the same pan you browned your beef
  • Add the onions and carrots. Cook for 2-3 minutes or until onions soften
  • Add the potatoes, beer, stock, bay leaves and thyme
  • Cook until the liquid starts boiling
  • Add everything in the skillet into the slow cooker on top of the beef
  • Cook on low for 4 hours or on high for 8 hours
  • Remove lid, add the peas and close the lid for 1-2 more minutes
  • Remove from slow cooker and serve
