In a skillet, heat 1 tablespoon of the oil and brown the pieces of beef. Work in batches to avoid overcrowding the pan. Add oil as needed between batches
Place the browned beef on the bottom of a slow cooker
Meanwhile heat 1 tablespoon of oil to the same pan you browned your beef
Add the onions and carrots. Cook for 2-3 minutes or until onions soften
Add the potatoes, beer, stock, bay leaves and thyme
Cook until the liquid starts boiling
Add everything in the skillet into the slow cooker on top of the beef
Cook on low for 4 hours or on high for 8 hours
Remove lid, add the peas and close the lid for 1-2 more minutes
