Guinness Beef Stew Recipe

Slow cooker beef stew made with beef and hearty veggies served with a delicious Guinness Beer sauce. Perfect Irish stew recipe for a cold winter’s night or in my case, a warm Florida evening.

Guinness Beer has a very deep taste that compliments the beef really well and slowly cooks down into a flavorful sauce. Do not worry about the alcohol content since it evaporates during the cooking process leaving only the savory goodness.

St. Patrick’s Day is the best excuse to use Irish Products on everyday recipes. Beef Stews are great to make in bulk and just freeze off in little baggies or eat during the week.

I love adding the potatoes at the beginning of the cooking process since they break down and melt thickening the sauce.  If you would like your potatoes to be firmer, you can add them at the middle of cooking.

Traditional Irish Stew is made with lamb or mutton. It has a different gamey flavor that is very distinctive. Unfortunately, I had a hard time finding both ingredients and ended up making it with Beef. It’s still has a melt in your mouth delicious flavor.

If you don’t have a crock pot, you can still make it using a Dutch Pan or a heavy bottomed pan. Simply simmer the ingredients on low heat for 2-3 hours. Just keep in mind that you need to check it in case the liquid absorbs and the meat ends up dry.

I don’t know about you but these comforting warm foods really lift my spirits on those stressful days. It’s nice to come home to the smell of fresh Guinness Beef Stew that’s been cooking all day. Just the aroma instantly changes my mood. My kids and hubby love the tender meat that falls off the bone.

Ingredients
  • 1 Lb Beef for Stew cubed
  • 1 clove Garlic crushed
  • 1 Onion sliced
  • 1 Cup Small Potatoes quartered
  • 2 Carrots sliced
  • 2 Bay Leaves
  • 2 Springs of Thyme
  • 1 Cup Peas frozen
  • 2-3 Tablespoons Olive Oil
  • Salt + Pepper
  • 14.9 oz Guinness Beer
  • 2 Cups Beef Stock
  • Chopped Parsley for garnish
US Customary - Metric
Instructions
  1. Dry meat on both sides using a paper towel
  2. Sprinkle Salt and Pepper generously over the beef
  3. In a skillet, heat 1 tablespoon of the oil and brown the pieces of beef. Work in batches to avoid overcrowding the pan. Add oil as needed between batches
  4. Place the browned beef on the bottom of a slow cooker
  5. Meanwhile heat 1 tablespoon of oil to the same pan you browned your beef
  6. Add the onions and carrots. Cook for 2-3 minutes or until onions soften

  7. Add the potatoes, beer, stock, bay leaves and thyme
  8. Cook until the liquid starts boiling
  9. Add everything in the skillet into the slow cooker on top of the beef
  10. Cook on low for 4 hours or on high for 8 hours
  11. Remove lid, add the peas and close the lid for 1-2 more minutes
  12. Remove from slow cooker and serve
