Ingredients

For Ceviche

  • 2 14-ounce cans hearts of palm, drained and sliced into bite-sized pieces
  • 1 ripe avocado diced
  • 1/2 medium red onion finely diced
  • 1 jalapeño seeded and finely chopped
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste

Citrus Dressing

  • 2 tablespoons vegetable oil or olive oil
  • 1/4 cup plus 2 tablespoons fresh lime juice about 3 limes
  • 2 tablespoons fresh orange juice
  • Salt and black pepper to taste

Instructions

  • Drain the hearts of palm well and slice them into bite-sized rounds.
  • In a large bowl, combine the hearts of palm, avocado, red onion, jalapeño, red bell pepper, and cilantro.
  • In a small bowl, whisk together the vegetable oil, lime juice, orange juice, salt, and pepper until fully combined.
  • Pour the dressing over the ceviche, adding only as much as needed to lightly coat the ingredients. Gently toss to combine.
  • Taste and adjust the seasoning with additional salt, pepper, or lime juice if needed.
  • Serve immediately, or refrigerate for 20 to 30 minutes to allow the flavors to meld before serving.

Notes

  • You may not need all of the dressing depending on how citrusy you like your ceviche.
  • Add the avocado just before serving for the freshest texture.
  • For extra sweetness, stir in diced mango or pineapple.
  • For a spicier ceviche, leave the jalapeño seeds in or add more to taste.
  • Serve with tortilla chips, tostadas, crackers, or spooned over tacos.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
