I love this recipe because it’s so easy to make. I usually have a bowl in the fridge and when my husband comes home from work, he serves himself while dinner is getting prepared.

In Venezuela, hearts of palm are very common to serve as a salad or appetizer. Here in the states, it is easily found in the vegetable can section of your supermarket. They’re ready to eat as soon as you open the can so all you need to do is slice and serve.

Ingredients
For Ceviche
  • 2 cans hearts of palm diced
  • 1 ripe avocado diced
  • 1/2 red onion diced
  • 1 jalapeno seeded, deveined and chopped
  • 1/2 cup red pepper
  • Cilantro chopped
  • Salt + Pepper to taste
Vinaigrette
  • 2 tablespoons soybean oil vegetable oil
  • 1/4 cup + 2 tablespoons lime juice 3 limes
  • 2 tablespoons orange juice
Instructions
  1. Place all ceviche ingredients in a bowl
  2. In a smaller bowl, whisk the vinaigrette ingredients
  3. Slowly add the vinaigrette into the ceviche until the desired flavor is achieved
  4. Note: you may not need all the vinaigrette
  5. Check for seasoning and serve
  6. Enjoy!
