For Salad
- 10 oz Edamame Beans cooked and cooled
- 1 can Corn
- 1 can Hearts of Palm sliced
- 2 tablespoons Cilantro chopped
- Salt + Pepper
For Dijon Vinaigrette
- 1 tablespoon Dijon Mustard
- 1 1/2 tablespoons Olive Oil
- 1 tablespoon Vinegar
- 1/2 teaspoon Sugar or Stevia
- Touch of pepper
Mix the vinaigrette ingredients together
Add the veggies and cilantro into a bowl
Add the vinaigrette and mix well
Refrigerate for at least 30 minutes before serving
- This salad tastes even better after chilling for 30 minutes.
- Add diced cucumber, avocado, cherry tomatoes, or toasted nuts for extra texture and flavor.
- Frozen shelled edamame works perfectly. Simply cook according to package directions and cool completely before assembling.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- For a brighter flavor, add a squeeze of fresh lemon juice before serving.
