Ingredients

For Cake

  • 6 tablespoons all purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 4 tablespoons sour cream
  • 4 tablespoons milk
  • 1 tablespoon lemon juice
  • 8 raspberries

Vanilla Glaze

  • 4 tablespoons powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

  • In a bowl, whisk together flour, sugar, and baking powder
  • Add oil, sour cream, milk, and lemon juice. Mix until smooth
  • Fold in raspberries and transfer batter to a large microwave-safe mug
  • Microwave for 1 1/2 to 2 minutes, until cake is set
  • In a small bowl, mix powdered sugar, milk, and vanilla until smooth
  • Drizzle glaze over warm cake
  • Serve and enjoy

Notes

• Use a large mug to prevent overflow
• Microwave times vary depending on wattage
• Do not overcook, or the cake will become dry
