Ingredients

For muffin batter

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon cinnamon
  • cloves pinch
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened, 1 stick
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup buttermilk

For Apple

  • 1 large Granny Smith Apple cored and peeled
  • 1/4 cup granulated sugar
  • 2 teaspoon cinnamon

Instructions

  1. Preheat oven to 425 degrees Fahrenheit
  2. Line a muffin pan with muffin liners
  3. Chop apples into small pieces and combine with sugar and cinnamon. Set aside
  4. In a bowl combine flour, salt, baking powder, baking soda, cloves, cinnamon, allspice, nutmeg, and cloves

  5. In the bowl of a mixer, place butter and sugars. Mix on medium speed until creamy
  6. Add eggs one at a time and continue mixing. Add vanilla. Scrape down the bowl of the mixer with a spatula
  7. Alternate adding the buttermilk and flour mixture, starting and ending with the flour
  8. Pour a little bit of the muffin batter in the muffin tin
  9. Add 1 teaspoon of the apple mixture on top
  10. Cover with more muffin batter
  11. Add 1 more 1 teaspoon of the apples
  12. With a skewer or a small knife swirl the apples into the batter
  13. Bake for 5 minutes, lower the heat to 350 degrees and bake for 15-20 minutes
  14. Enjoy
