Ingredients
For muffin batter
2 1/2cupsall purpose flour
1teaspoonbaking powder
1teaspoonbaking soda
1/2teaspoonnutmeg
1/2teaspoonallspice
1teaspooncinnamon
clovespinch
1/2teaspoonsalt
1/2cupunsalted buttersoftened, 1 stick
1cupbrown sugar
1/4cupgranulated sugar
2eggs
1teaspoonvanilla
1cupbuttermilk
For Apple
1large Granny Smith Applecored and peeled
1/4cupgranulated sugar
2teaspooncinnamon
Instructions
Preheat oven to 425 degrees Fahrenheit
Line a muffin pan with muffin liners
Chop apples into small pieces and combine with sugar and cinnamon. Set aside
In a bowl combine flour, salt, baking powder, baking soda, cloves, cinnamon, allspice, nutmeg, and cloves
In the bowl of a mixer, place butter and sugars. Mix on medium speed until creamy
Add eggs one at a time and continue mixing. Add vanilla. Scrape down the bowl of the mixer with a spatula
Alternate adding the buttermilk and flour mixture, starting and ending with the flour
Pour a little bit of the muffin batter in the muffin tin
Add 1 teaspoon of the apple mixture on top
Cover with more muffin batter
Add 1 more 1 teaspoon of the apples
With a skewer or a small knife swirl the apples into the batter
Bake for 5 minutes, lower the heat to 350 degrees and bake for 15-20 minutes
