Ingredients

For the Pudding:

  • 4 cup almond milk your choice
  • 3/4 cup Chia seeds
  • 1/2 cup honey or sweetener of choice

For the Berry Compote

  • 1 cup frozen berries fresh works too
  • 1 tsp fresh lime juice
  • 1/4 cup sugar
  • 1 tsp cornstarch

Instructions

For the Pudding:

  1. Mix all the ingredients, stir and allow to sit in the fridge overnight or for at least 3 hours

For the Berry Sauce (Compote)

  1. Add all the ingredients to a medium saucepan over medium heat and bring it to a boil
  2. Reduce heat and allow to simmer for 5 minutes (for fresh berries)
  3. Stir frequently. Once all the fruit has broken apart and the sauce has thicken, remove from heat Allow to sit for 10 minutes
  4. Mix the berry sauce with chia pudding or use sauce over ice cream, yogurt or even pancakes!
