Ingredients

For Guacamole

  • 2 Avocados ripe
  • 2 tablespoons Cilantro chopped
  • Juice of 1 lime
  • Salt + Pepper to taste

For Toast

  • 4 thick slices of sourdough bread
  • 1/2 cup canned corn
  • 1/8 Red onion thinly sliced
  • 8 Cherry Tomatoes sliced
  • 2 tablespoons Cilantro chopped
  • 6 Shrimp cooked and chilled
  • Salt + Pepper to taste

For Spicy Mayo*

  • 1/4 cup Mayonnaise
  • 1 tablespoon Sriracha

Instructions

For Guacamole

  1. Peel and halve the avocados. Place them in a bowl and mash with a fork. Add the cilantro, lime juice, salt, and pepper. Mix and taste. Add more lime or seasoning if needed

Assembly

  1. Toast the sourdough slices

  2. Cut the shrimp in half lengthwise. It will give you thinner pieces which makes them easier to eat

  3. In a bowl, mix the mayo and sriracha. If you'd like it spicier add more Sriracha

  4. Place the toasts on a plate. Spread a thin layer of spicy mayo. Divide the guacamole between the 4 toasts

  5. Add the shrimp, tomatoes, onions, cilantro, and corn. Season with salt and pepper

  6. Drizzle the spicy mayo on top

  7. Enjoy!

*Some supermarkets sell spicy mayo already made in the sushi section.
