Ingredients
For Guacamole
2Avocadosripe
2tablespoonsCilantrochopped
Juice of 1 lime
Salt + Pepperto taste
For Toast
4thick slices of sourdough bread
1/2cupcanned corn
1/8Red onionthinly sliced
8Cherry Tomatoessliced
2tablespoonsCilantrochopped
6Shrimpcooked and chilled
Salt + Pepper to taste
For Spicy Mayo*
1/4cupMayonnaise
1tablespoonSriracha
Instructions
For Guacamole
Peel and halve the avocados. Place them in a bowl and mash with a fork. Add the cilantro, lime juice, salt, and pepper. Mix and taste. Add more lime or seasoning if needed
Assembly
Toast the sourdough slices
Cut the shrimp in half lengthwise. It will give you thinner pieces which makes them easier to eat
In a bowl, mix the mayo and sriracha. If you'd like it spicier add more Sriracha
Place the toasts on a plate. Spread a thin layer of spicy mayo. Divide the guacamole between the 4 toasts
Add the shrimp, tomatoes, onions, cilantro, and corn. Season with salt and pepper
Drizzle the spicy mayo on top
