Spicy Shrimp Avocado Toast

Ingredients

For Guacamole

  • 2 ripe avocados
  • 2 tablespoons cilantro chopped
  • Juice of 1 lime
  • Salt and pepper to taste

For Toast

  • 4 thick slices sourdough bread
  • 1/2 cup corn kernels fresh, canned, or thawed frozen
  • 1/8 red onion thinly sliced
  • 8 cherry tomatoes halved
  • 2 tablespoons cilantro chopped
  • 6 cooked shrimp chilled
  • Salt and pepper to taste

For Spicy Mayo

  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha

Instructions

For Guacamole

  • Mash the avocados in a bowl with a fork.
  • Stir in the cilantro, lime juice, salt, and pepper.
  • Taste and adjust seasoning if needed.

Assembly

  • Toast the sourdough slices until golden and crisp.
  • Slice the shrimp in half lengthwise for easier assembly.
  • In a small bowl, stir together the mayonnaise and sriracha.
  • Spread a thin layer of spicy mayo over each toast.
  • Divide the guacamole evenly among the toasts.
  • Top with the shrimp, corn, tomatoes, red onion, and cilantro.
  • Season lightly with salt and pepper.
  • Drizzle with additional spicy mayo and serve immediately.

Notes

  • Use cooked and chilled shrimp for this recipe.
  • Cut the shrimp in half lengthwise so they sit better on the toast.
