For Guacamole 2 ripe avocados 2 tablespoons cilantro chopped Juice of 1 lime Salt and pepper to taste For Toast 4 thick slices sourdough bread 1/2 cup corn kernels fresh, canned, or thawed frozen 1/8 red onion thinly sliced 8 cherry tomatoes halved 2 tablespoons cilantro chopped 6 cooked shrimp chilled Salt and pepper to taste For Spicy Mayo 1/4 cup mayonnaise 1 tablespoon sriracha
For Guacamole Mash the avocados in a bowl with a fork.
Stir in the cilantro, lime juice, salt, and pepper.
Taste and adjust seasoning if needed.
Assembly Toast the sourdough slices until golden and crisp.
Slice the shrimp in half lengthwise for easier assembly.
In a small bowl, stir together the mayonnaise and sriracha.
Spread a thin layer of spicy mayo over each toast.
Divide the guacamole evenly among the toasts.
Top with the shrimp, corn, tomatoes, red onion, and cilantro.
Season lightly with salt and pepper.
Drizzle with additional spicy mayo and serve immediately.
