This refreshing mango salad is bright, juicy, and packed with fresh flavor. Made with ripe mangoes, red onion, cilantro, and lemon juice, it’s the perfect easy summer side dish, appetizer, or fresh salsa for chips.

Ingredients

  • 2 ripe mangoes peeled and diced
  • 1/4 red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • Juice of 2 lemons about 4 tablespoons
  • Salt to taste
  • Black pepper to taste

Instructions

  • Peel and dice the mangoes into bite-sized cubes.
  • Finely dice the red onion and chop the cilantro.
  • Add the mangoes, onion, cilantro, and lemon juice to a large bowl.
  • Season with salt and black pepper to taste.
  • Toss gently until everything is evenly combined.
  • Taste and adjust seasoning if needed.
  • Refrigerate for 15–30 minutes before serving for best flavor, or serve immediately.
  • Enjoy as a salad, appetizer, or scoop with tortilla chips.

Notes

  • Use ripe but firm mangoes so the salad holds its shape.
  • For extra heat, add finely diced jalapeño.
  • Lime juice can be used instead of lemon for a slightly different citrus flavor.
  • This salad is best served fresh the same day.
  • Delicious alongside grilled chicken, fish, steak, or as a topping for tacos.
