This Refreshing Mango Salad is bright, juicy, colorful, and incredibly easy to make. With ripe mangoes, red onion, cilantro, and lemon juice, it comes together in just 10 minutes.

A Venezuelan-Inspired Mango Salad

I grew up eating mangoes in Venezuela, where mango trees seemed to be everywhere. We used mangoes in everything from snacks to desserts, and this simple mango salad has always been one of my favorite warm-weather recipes.

The sweet mango, sharp onion, fresh cilantro, and citrus juice make a beautiful combination that balances rich or grilled foods perfectly.

What Kind of Mango Should I Use?

Use ripe but firm mangoes. They should taste sweet but still hold their shape when diced.

If the mangoes are too soft, the salad can become mushy. If they are too green, the flavor will be more sour and crunchy. Both can work, but ripe and firm is the sweet spot.

This salad is very versatile. Serve it with:

Ingredients

  • 2 ripe mangoes peeled and diced
  • 1/4 red onion finely diced
  • 1/4 cup fresh cilantro chopped
  • Juice of 2 lemons about 4 tablespoons
  • Salt to taste
  • Black pepper to taste

Instructions

  • Peel and dice the mangoes into bite-sized cubes.
  • Finely dice the red onion and chop the cilantro.
  • Add the mangoes, onion, cilantro, and lemon juice to a large bowl.
