For Beef
- 3 –4 lbs eye round beef
- Salt and pepper to taste
- 1 tablespoon olive oil
For Sauce
- 12 oz Coca-Cola not diet
- 1/2 cup balsamic vinegar
- 1 1/2 cups beef stock
- 2 bay leaves
- 2 onions sliced
Pat beef dry and season generously with salt and pepper
Heat olive oil in a large skillet over medium-high heat
Sear the beef on all sides, including ends, until deeply browned, about 8–10 minutes
Transfer beef to the slow cooker
In the same skillet, add onions and cook until softened, scraping up browned bits
Add beef stock, balsamic vinegar, and Coca-Cola; bring to a simmer
Pour sauce over the beef and add bay leaves
Cover and cook on LOW for 8 hours or HIGH for 4 hours, until tender
Remove beef and slice or shred
- Browning the beef is essential for deep flavor; do not skip
- Do not use diet soda, as it will affect the flavor
- This dish tastes even better the next day
- Serve with white rice, mashed potatoes, or crusty bread
- Slice against the grain for the most tender texture
