Ingredients

For Beef

  • 3 –4 lbs eye round beef
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For Sauce

  • 12 oz Coca-Cola not diet
  • 1/2 cup balsamic vinegar
  • 1 1/2 cups beef stock
  • 2 bay leaves
  • 2 onions sliced

For Thickening

  • 2 teaspoons cornstarch

For Garnish

  • Fresh parsley chopped

Instructions

  • Pat beef dry and season generously with salt and pepper
  • Heat olive oil in a large skillet over medium-high heat
  • Sear the beef on all sides, including ends, until deeply browned, about 8–10 minutes
  • Transfer beef to the slow cooker
  • In the same skillet, add onions and cook until softened, scraping up browned bits
  • Add beef stock, balsamic vinegar, and Coca-Cola; bring to a simmer
  • Pour sauce over the beef and add bay leaves
  • Cover and cook on LOW for 8 hours or HIGH for 4 hours, until tender
  • Remove beef and slice or shred

Notes

  • Browning the beef is essential for deep flavor; do not skip
  • Do not use diet soda, as it will affect the flavor
  • This dish tastes even better the next day
  • Serve with white rice, mashed potatoes, or crusty bread
  • Slice against the grain for the most tender texture
