4 boneless skinless chicken breasts 2 cans black beans rinsed and drained 16 oz Bottle of Salsa Verde 1 can Corn 1/2 tablespoon Cumin 1/2 teaspoon Garlic Powder Salt and Pepper to taste Garnish (optional) slices Lime/Lemon leaves Cilantro/Parsley Tomato chopped
In a slow cooker place the chicken breasts on the bottom
Add the corn and black beans
Add the cumin, garlic, salt and pepper
Pour the salsa verde on top. Mix
Cook on high for 4-5 hours
When ready, remove chicken from the slow cooker and shred using 2 forks
Place the chicken back in the slow cooker and mix with the sauce
Serve on top of rice or with tortillas
Top with fresh veggies and herbs if desired
