I love the creamy texture, the fresh flavor and the heartiness. You can serve them between tortillas for tacos and burritos or on top of white rice like I did.
ThisÂ Slow Cooker Chicken And Black Beans has a lot of flavor because of the spices I added and the delicious salsa verdeÂ in the sauce.Â I used the store bought version but you can certainly make it from scratch. You can also use regular salsa.

- 4 boneless skinless chicken breasts
- 2 cans black beans rinsed and drained
- 16 oz Bottle of Salsa Verde
- 1 can Corn
- 1/2 tablespoon Cumin
- 1/2 teaspoon Garlic Powder
- Salt and Pepper to taste
- slices Lime/Lemon
- leaves Cilantro/Parsley
- Tomato chopped
In a slow cooker place the chicken breasts on the bottom
Add the corn and black beans
Add the cumin, garlic, salt and pepper
Pour the salsa verde on top. Mix
Cook on high for 4-5 hours
When ready, remove chicken from the slow cooker and shred using 2 forks
Place the chicken back in the slow cooker and mix with the sauce
Serve on top of rice or with tortillas
Top with fresh veggies and herbs if desired
