This has got to be the easiest chicken recipe on the planet! Throw everything in a crock pot in the morning, go to work and come home to a delicious Slow Cooker Chicken And Black Beans. I love the creamy texture, the fresh flavor and the heartiness. You can serve them between tortillas for tacos and burritos or on top of white rice like I did.

This Slow Cooker Chicken And Black Beans has a lot of flavor because of the spices I added and the delicious salsa verde in the sauce. I used the store bought version but you can certainly make it from scratch. You can also use regular salsa.

It’s been a few weeks since school started and I am getting into the groove into my new routine. My little one rides the bus and I have to drive my older one. So far, so good. I have enough time to cook, work and do my errands. These kind of meals help me have a freshly made dinner on the table without messing up my kitchen. Since my husband comes home from lunch, I have to cook 2 different meals in one day.

I love to top my Slow Cooker Chicken And Black Beans with tomato cubes and fresh herbs. You can also use grated cheese, avocado or even tortilla pieces. This dish is totally customizable to suit your needs.

Being Latina, I love black beans, to me it’s the ultimate comfort food. Now I can eat it in a totally different way. The corn adds sweetness and freshness to the dish as well.

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 cans black beans rinsed and drained
  • 16 oz Bottle of Salsa Verde
  • 1 can Corn
  • 1/2 tablespoon Cumin
  • 1/2 teaspoon Garlic Powder
  • Salt and Pepper to taste
Garnish (optional)
  • slices Lime/Lemon
  • leaves Cilantro/Parsley
  • Tomato chopped
Instructions
  1. In a slow cooker place the chicken breasts on the bottom
  2. Add the corn and black beans
  3. Add the cumin, garlic, salt and pepper
  4. Pour the salsa verde on top. Mix
  5. Cook on high for 4-5 hours
  6. When ready, remove chicken from the slow cooker and shred using 2 forks
  7. Place the chicken back in the slow cooker and mix with the sauce
  8. Serve on top of rice or with tortillas
  9. Top with fresh veggies and herbs if desired
