For Shredded Chicken 6 chicken breasts boneless and skinless 1 packet taco seasoning low sodium 1 medium Onion sliced 4.5 oz green chilies 14.5 oz roasted tomatoes 1/2 cup cilantro roughly chopped For Tacos and Toppings 12 Corn or Flour Tortillas Shredded Cheese Tomatoes chopped Lettuce shredded Sour Cream Guacamole Cilantro chopped
For Shredded Chicken Add chicken breasts to slow cooker and sprinkle with taco seasoning. Add diced onion, undrained green chilies, and undrained roasted to tomatoes to the slow cooker and cover.
Cook on LOW for 6 to 8 hours, or until chicken is cooked all the way through
Once fully cooked, shred the chicken using forks
Serve with warm tortillas and preferred toppings
