Easy Slow Cooker Shredded Chicken Tacos
It’s hot out there, Miami has become an unbearable outdoor sauna.
Honestly, I do not want to bake, or cook, since the weather is driving me crazy. In these instances I rely on my good ol’ slow cooker. It does all the work for me while I’m at the pool or beach and it won’t heat my entire house.
These Slow Cooker Shredded Chicken Tacos are the perfect summer dinner. You can serve a big bowl of the chicken, guacamole, sour cream, veggies, shredded cheese and warm tortillas.
Taco Tuesday becomes the highlight of the week since everybody can customize their own.
My perfect taco has chicken, tomatoes, cheese, cilantro, lettuce, and sour cream. YUM!
The bird cooks up juicy, tender, and flavorful thanks to cooking it low and slow.
You can make it in advance, refrigerate, and heat up whenever you want to serve dinner.
This recipe is excellent for entertaining as well. Just create your very own chicken taco bar buffet style. It makes for an inexpensive low effort party idea.

Don’t forget to place hot sauce on your table in case family members prefer their tacos spicy. In my case, my husband.
I like it medium to mild. Sometimes I’ll throw in some seeded jalapeños for an extra pop in flavor.
Limes go great as a finisher for these Slow Cooker Shredded Chicken Tacos. The acid goes perfect with the savory chicken. Add a bit at a time until your desired flavor is achieved.

- 6 chicken breasts boneless and skinless
- 1 packet taco seasoning low sodium
- 1 medium Onion sliced
- 4.5 oz can of green chilies
- 14.5 oz can of roasted tomatoes
- 1/2 cup cilantro roughly chopped
- 12 Corn or Flour Tortillas
- Shredded Cheese
- Tomatoes chopped
- Lettuce shredded
- Sour Cream
- Cilantro chopped
Add chicken breasts to slow cooker and sprinkle with taco seasoning. Add diced onion, undrained green chilies, and undrained roasted to tomatoes to the slow cooker and cover.
Cook on LOW for 6 to 8 hours, or until chicken is cooked all the way through
Once fully cooked, shred the chicken using forks
Serve with warm tortillas and preferred toppings
