For the Dish: 10 oz Soba Noodles 1 Lb Asparagus cleaned and cut into 3 8 oz Mushrooms sliced 2 Cups Edamame shelled 2 Carrots peeled and julienned (or sliced thinly) Salt + Pepper 1 Teaspoon Oil any kind For Sauce 2 Tablespoons Soy Sauce 2 Teaspoons Sesame Oil 2 Teaspoons Sriracha Juice of 1 Lime 1/2 Teaspoon Ginger minced Garnish 1/4 Cup Cilantro chopped 1 Green Onion sliced
Mix all the sauce ingredients together in a small bowl. Set aside
Bring one big pot of water to a boil
Season the water with salt, pepper and add a little oil
Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
Add the carrots and cook for 2 more minutes. Stir
Drain the whole mixture in a colander
Pour the pasta and veggies back in the pot
Add the sauce on top and stir well with a wooden spoon
Serve and enjoy!
