Soba Noodles With Edamame And Spring Veggies

This delicious vegetarian one pot meal comes together in 5 minutes or less. Served with an Asian sesame sauce that makes the veggies pop. If you’re looking for a last minute dinner idea, try this recipe.

I don’t know why, but I have a weird fixation with eating noodles on chopsticks. It’s a comforting experience so every time I have the chance, I try to create recipes that will indulge my weird fixation and that are delicious.

Now that Spring is here, there are tons of delicious veggies in season like asparagus and carrots that are perfect for this Soba Noodles With Edamame dish. Plus they cook alongside the pasta and edamame to make this meal come together in a cinch.

Did you know that Soba noodles cook in just 3-4 minutes?  It takes more time for the pot of water to boil than to cook the entire dinner.

As you can see, making these guys is very easy, the only thing you need to be careful is no to OVERCOOK your pasta and veggies.

Just one more minute and they turn up soggy and lumpy.. yuck! You’ll want your asparagus to be nice and green and the noodles to be loose. Please set your timer a 3 to 4 minutes NO MORE.

I love to top it off with green onions and cilantro for a great fresh taste that has a bite to it. You can certainly add your preferred toppings or simply leave it like it is. Another idea is to add some cooked shredded chicken or shrimp if you’d like some meat in it.

The sauce is really tasty. It has sriracha, tangy lime, sesame oil, soy sauce that come together and compliment each other perfectly. This sauce can also be used for stir fries and other dishes as well.

Ingredients
For the Dish:
  • 10 oz Package of Soba Noodles
  • 1 Lb Asparagus cleaned and cut into 3
  • 8 oz Mushrooms sliced
  • 2 Cups Edamame shelled
  • 2 Carrots peeled and julienned (or sliced thinly)
  • Salt + Pepper
  • 1 Teaspoon of Oil any kind
For Sauce
  • 2 Tablespoons Soy Sauce
  • 2 Teaspoons Sesame Oil
  • 2 Teaspoons Sriracha
  • Juice of 1 Lime
  • 1/2 Teaspoon Ginger minced
Garnish
  • 1/4 Cup Cilantro chopped
  • 1 Green Onion sliced
Instructions
  1. Mix all the sauce ingredients together in a small bowl. Set aside
  2. Bring one big pot of water to a boil
  3. Season the water with salt, pepper and add a little oil
  4. Throw in the soba noodles, edamame, mushrooms and asparagus. Cook for 1 minute
  5. Add the carrots and cook for 2 more minutes. Stir
  6. Drain the whole mixture in a colander
  7. Pour the pasta and veggies back in the pot
  8. Add the sauce on top and stir well with a wooden spoon
  9. Serve and enjoy!
  10. PS: DO NOT OVERCOOK
