Ingredients

For Salad

  • 8 oz Surimi diced
  • 1/2 Cucumber diced
  • 1/4 of Purple Onion chopped
  • 1 Avocado diced

For Sesame Dressing

  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seed oil
  • 1 tablespoon toasted sesame seeds
  • 1 teaspoon sugar

Garnish

  • Cherry Tomatoes
  • Sesame Seeds

Instructions

  • For Salad
  • Toss the diced veggies and surimi together in one bowl
  • For Dressing
  • Whisk all the sesame dressing ingredients together in one bowl
  • Assembly
  • Pour dressing over salad and toss
  • Garnish with tomato and more sesame seeds (optional)
