For Ceviche 2 cans hearts of palm diced 1 ripe avocado diced 1/2 red onion diced 1 jalapeno seeded, deveined and chopped 1/2 cup red pepper Cilantro chopped Salt + Pepper to taste Vinaigrette 2 tablespoons soybean oil vegetable oil 1/4 cup + 2 tablespoons lime juice 3 limes 2 tablespoons orange juice
Place all ceviche ingredients in a bowl
In a smaller bowl, whisk the vinaigrette ingredients
Slowly add the vinaigrette into the ceviche until the desired flavor is achieved
Note: you may not need all the vinaigrette
Check for seasoning and serve
