Venezuelan Rice Arepas

Got any leftover rice? These delicious gluten-free crispy rice arepas and are made to be stuffed with your favorite fillings. Ideal for breakfast & dinner.

Ingredients

  • 1 cup Cooked Vigo Cilantro Lime Rice cooled
  • 1/2 cup Masa Arepa
  • 1/4 cup Water
  • 1 Egg
  • 2 tablespoons Parmesan Cheese optional
  • Salt & Pepper to taste

Instructions

  • In a bowl, mix the cooked rice and masa arepa. Bring the mixture together with your hands, adding water a little at a time until it comes together
  • Mix in the egg, cheese, salt, and pepper. If mixture seems too dry add water a little a time
  • Shape dough into round patties
  • Heat a griddle or a skillet on medium heat. Add nonstick spray
  • Cook arepas for 3-4 minutes or until browned. Flip over and cook them on the other side until golden
  • Remove from heat, split and fill
  • Enjoy!

Day old rice is ideal for this recipe
