Venezuelan Tequeños (Crispy Cheese Sticks)

Crispy on the outside and cheesy on the inside, these Venezuelan tequeños are the ultimate appetizer. Made with simple dough and queso de freír, this authentic recipe is perfect for parties, snacks, and entertaining.

Ingredients

  • 16 oz Queso de Freír (or firm white frying cheese)
  • 3 cups All Purpose Flour
  • 2 Eggs
  • 2 teaspoons Salt
  • 1/4 teaspoon Baking Powder
  • 2 tablespoons Butter melted
  • 1/2 cup Water warm
  • 1 1/2 cups Vegetable Oil for frying

Instructions

  • Place flour in a bowl. Add the salt and baking powder. Mix
  • Add the eggs and mix with a wooden spoon
  • Add the butter and stir
  • Finally add the warm water and knead with your hands until the dough is smooth
  • Cover and let it rest for 10 minutes
  • Meanwhile, cut the cheese into 3/4" sticks
  • With a rolling pin, roll the dough into a rectangle, 1/4" thick
  • Use a pizza cutter or knife to slice the rectangle into long strips
  • Wrap each cheese stick diagonally with a strip of dough, making sure it is completely sealed. Roll gently on the surface to secure the edges. Repeat with remaining pieces.
  • Heat oil to 350 Degrees F
  • Fry 4-5 Tequeños at a time until golden brown. Remove form the oil and drain with a paper towel. 

Notes

- Do not use mozzarella, it melts too much and leaks during frying
- Queso de freír or similar firm white cheese works best
- Make sure edges are tightly sealed to prevent cheese from escaping
- Fry in batches to avoid overcrowding the pan
- Tequeños can be frozen before frying and cooked directly from frozen
