Ingredients

  • 1/2 Cup Watermelon puree with or without sugar
  • 1 Tablespoon sugar optional
  • 2 tablespoons White Rum more or less to suit your taste
  • 2 teaspoons Lime juice
  • 4 leaves Mint
  • Ice
  • Sparkling Water

Instructions

  • Puree watermelon in a food processor or blender. If your watermelon isn't sweet enough add about 1 Tbsp of sugar
  • Add the rum
  • Divide the watermelon juice between two glasses.
  • Add a couple of mint leaves
  • Squeeze the lime juice into each glass
  • Fill up the remaining of the glasses with your favorite sparkling water
  • Decorate with watermelon balls and limes.
