Watermelon Mojitos
Here in Miami there’s only one thing that can beat the heat: MOJITOS. Refreshing with lime and mint, these cocktails are the perfect drink for parties, get-togethers and poolside. Watermelon adds a different dimension bringing sweetness and a beautiful color.
When I grew up, there was always pitcher full of watermelon juice in my fridge. We drank a lot of natural fruit juices and definitely these Watermelon Mojitos are the adult version of my favorite childhood drink. The mint just brings it over the top. It gives out the natural flavor in an unexpected way.
This summer I am enjoying every second and not taking anything for granted. My youngest daughter is starting Kindergarten in a new school and I’ll have to juggle 2 different school and 2 different schedules. With the work on the blog and the girls, September is going to hectic and exciting. I am nervous for her because she doesn’t know anybody at this new school. Although she’s very outgoing and outspoken.

So before summer ends I try to sneak in a date night with my hubby and enjoy delicious Watermelon Mojitos. If you’re not an alcohol drinker, ditch the rum and make it a Mocktail! It’s so easy and they look very pretty.
See how cute the watermelon balls look? My daughters kept stealing them and I ended up using the whole watermelon. They also look pretty on fruit salads. The intense red color is very eye catching.

- 1/2 Cup Watermelon puree with or without sugar
- 1 Tablespoon sugar optional
- 2 tablespoons White Rum more or less to suit your taste
- 2 teaspoons Lime juice
- 4 leaves Mint
- Ice
- Sparkling Water

Puree watermelon in a food processor or blender. If your watermelon isn't sweet enough add about 1 Tbsp of sugar

Add the rum

Divide the watermelon juice between two glasses.

Add a couple of mint leaves

Squeeze the lime juice into each glass

Fill up the remaining of the glasses with your favorite sparkling water

Decorate with watermelon balls and limes.
