Pina Colada Popsicles
I am loving summer! This year we are enjoying every minute of it. My girls are beating the heat by spending as much time as they can either at the pool or in the ocean.
Their fingers and toes are wrinkled but the smiles on their faces are always there. I keep them happy by making frozen refreshing treats with ingredients that they love.
These delicious Pina Colada Popsicles are non-alcoholic, sweet, tangy and all the familiar taste of your favorite cocktail served on a stick.
I even added the maraschino cherries inside because you can’t have a cocktail without a cherry on top. And just because I am not a stingy island bartender, I added 2 š
I am fortunate enough to eat Paletas (AKA Popsicles) all year long since I use Dole Frozen Fruit. They make it easy to enjoy seasonal fruit all year long without added sugar. Did you know that they are washed and frozen just after they were picked? It’s the best way to seal in their freshness.
I love using my Dole Frozen Fruit for smoothies, ice cream, and desserts. Sometimes, I don’t even bother to thaw them. I open the bag and throw the fruit right in the blender. In this case, I used pineapple chunks that come perfectly chopped and ready to use.
So have fun and start making these Pina Colada Popsicles. Only 5 ingredients, one blender and a few hours in the freezer. It does not get any easier than that.

Pina Colada Popsicles
Ingredients
- 1 1/2 Cups of Dole Frozen Pineapple Chunks
- 1 - 13.5 oz Can of Coconut Milk
- 1/2 Cup of Shredded Coconut
- Juice of Half a lemon
- 16 Maraschino Cherries
Instructions
- In a blender, place the lemon juice, coconut milk and the frozen pineapple chunks. Blend on high speed until the pineapple is completely blended and mixed with the milk
- Test for sweetness. If needed, add a teaspoon of sugar
- Using a popsicle maker, add in 2 cherries, then the pina colada mixture and finally sprinkle a few flakes of shredded coconut before inserting the stick
- Freeze for a minimum of 4 hours
- Unmold and enjoy!
You can use any Popsicle Mold you would like!
