Chocolate Covered Peppermint Blondies
Are you tired of all those Christmas cookies floating around the web? Want to try something else? I got you covered. These amazing peppermint blondies will blow your socks off in terms of flavor, texture, and presentation.
I love the fact that they are chewy, with a soft chocolate top, and then crunchy for the candy canes. Since the candies are sprinkled in, each bite will have a different taste. Kind of surprising.
These Holidays I am in the kitchen baking with my girls. This recipe is perfect since they can help me mix, spread, top and sprinkle their favorite candies.
One of my girls loves to throw everything in randomly, while the other is more calculating and likes creating patterns within the blondies. What a great way to show their different personalities while we bond.
Not a fan or peppermint? Simply omit from the recipe and top with M&M’s and cookies n’ cream candy. You can actually make these Chocolate Covered Peppermint Blondies all year round, simply use different colors and flavorings.
Sometimes brownies get all the attention, but to me, a blondie has much more depth of flavor and chewiness due to the use of brown sugar in the batter. I added tons of mini chocolate chips in mine to get hints of chocolate in every bite.

Chocolate Covered Peppermint Blondies
Ingredients
For Blondies
- 1 cup All Purpose Flour
- 1 cup Packed Brown Sugar
- 1 stick butter, softened (1/2 cup)
- 1 large egg room temperature
- 1/3 cup mini chocolate chips
- 2 teaspoons pure vanilla extract
- 1/8 teaspoon peppermint extract
- 1/4 teaspoon salt
For Peppermint-Chocolate Layer
- 3/4 cup Semi-Sweet Chocolate Chips
- 1/2 cup Assorted Peppermint Candies candy cane, peppermint M&Ms, etc
Instructions
- Heat oven to 350 F. Grease and line a 8 inch or 9-inch baking pan with parchment paper.
- Melt butter in a medium sized microwave safe bowl
- Stir in sugar
- Whisk in the egg, vanilla extract, peppermint extract and salt till smooth. Now add the flour and mix well. Fold in the chocolate chips.
- Pour into the lined pan. Use a spatula to blend the dough evenly
- bake for 20-22 minutes till done
- Sprinkle the mini chocolate chips into the hot blondies and using a spatula spread it out evenly once it starts melting
- Throw in the pepperminty stuff while the chocolate is still warm. Let it cool down completely before cutting into squares.
