Pina Colada Floats
I don’t about you, but Pina Cola for me = Caribbean Vacation, and since I live in Miami, it is safe to assume that for now, I am enjoying my staycation in my humble abode.
So, I will drink my Pina Colada Floats outside on the patio without worrying about homework, recitals, and carpools. I made this virgin so the whole family can enjoy them.
Yesterday I was cruising the ice cream aisle at the supermarket (a bad little habit of mine), and I noticed that Haagen Dazs had a Pineapple Coconut ice cream flavor and I said to myself. FLOATS!! It’s a dessert and a drink at the same time. Delicious, and supposedly let’s count the cherry on top as the fruit factor.
One of my favorite Caribbean drinks are Pina Coladas, usually, I enjoy my cocktails with lot’s of alcohol in them. But when it comes to Pina Coladas, I personally think the rum takes away from the delicate flavor of the coconut and pineapple. But if you’d like, spike some white rum inside your floats.
If you’ve never had a float before, you are going to love it. It entails a bubbly soda with an ice cream and a straw. What’s not to like? The most famous one is the Root Beer float served with creamy vanilla ice cream. I made mine with Pina Colada just to pretend I’m on vacation 🙂
When you head on to your grocery store, look for the frozen juice section. They sell alcohol-free Pina Colada concentrate that only requires to blend it with some water and ice. Toss with some soda water, ice cream and you’re in float heaven! Â Don’t forget the cherry on top.

- 15 oz Pina Colada Frozen Concentrate (can)
- 1 Cup Pineapple Coconut Ice Cream
- 2 Cups Water
- 1 Cup Ice
- Club Soda to taste
- Cherries optional

In a blender, add the can of pina colada concentrate, water and ice and blend until well combined

Fill 1/4 of glasses with this mixture

Fill the rest of the glass 3/4 full with the club soda

Add 2 small scoops of ice cream into the top of each glass

top with cherries (optional)
