The 3 Ingredient recipe, it was pretty bad in regards to taste & texture. However, we may tweak it by adding coconut flour and try it as a “pancake”.
There are some great sugar free chocolates out there but I am still on the hunt for a great sugar free cake/cupcake. Will have to try the sugar free vanilla cake….

Hi Kate,I make my own for my diabetic husband. I use ground almonds instead of most of the flour, (adding only about twp ounces of SR flour to 4ounces of almonds to the mix) and I use fresh fruit instead of sugar.. With a spoon of baking powder, and 6ounces of low fat spread, and three eggs. I also add some dried cranberries/sultanas, or anything I have handy. They don’t have quite the same consistency as normal little cakes, but they are good for a healthy snack when baked goods are the only thing you want. For the fresh fruit, I have used bananas, or grated apple or pears.. I would also add that I keep them in a sealed container in the fridge, as they won’t keep as well as flour based ones with sugar.
