This crunchy and delicious Potato Chip Crusted Fish recipe is ready in 20 minutes or less and is served with a tangy lemon-garlic mayonnaise dipping sauce. Perfect as a quick dinner idea.
Thank you, Frito-Lay, for sponsoring this recipe and helping my family have a successful game night.
Crunchy Potato Chip Crusted Fish Dinner
This amazing Potato chip-crusted fish is not only easy to make, but it is also kid-friendly as well. Perfect for the entire family. Whenever I make it, my girls help to crush the chips in a zip-top bag. It’s their favorite part of the process.
The idea for this recipe came a couple of months ago when my husband and I traveled to London. We tried their famous fish & chips and they were so flavorful, crunchy, and savory.
When I came home, I wanted to make it for my girls and give it an original twist.
So instead of eating fish & chips, why not crust the fish with potato chips?
IT WORKED!
And guess what? No frying involved! I oven-roasted my fish and it turns out crunchy and delicious. Not even the chips were fried.
I used delicious Lay’s Baked Potato Chips. All the flavor, all the crunch, but not fried so less fat than regular chips.
I love the flavor. It’s so airy and light.
The dipping sauce is a light lemon garlic mayo. The flavors complement nicely.
My husband and I were talking the other day and we realized that we’ve been working too much. So we made a plan to spend more time as a family. To do that, we will turn off our screens one night a week and play a fun game with our girls.
This week we’ll play Go Fish while eating this delicious Potato Chip Crusted Fish & Chips. Get it? 😉
I love this idea since you can eat them while playing. Keeps the kids entertained while I sneak in some chips.
All the ingredients to make this recipe can be found at your local Publix. For the fish I used cod, but you can substitute for Mahi Mahi or any other white meaty fish.
Publix has everything you need to create the perfect family game night. So head on to your local store and make it a night to remember.
I hope you can try this delicious Potato Chip Crusted Fish & Chips at home. If you do, please upload a pic on Instagram and tag me @Livingsweetmoments or use the hashtag #LivingSweet. I promise to repost it.
Potato Chip Crusted Fish
Ingredients
For Fish
- 1 1/2 lbs White Fish (I used Cod)
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Paprika
- 3/4 cup Buttermilk
- 1 1/2 cups Crushed Frito-Lay Oven Baked Chips
- 3/4 cup Bread Crumbs
- Salt + Pepper to taste
- Lemon Juice to taste
Lemon Garlic Mayonnaise
- 1 cup Light Mayonnaise
- 1 tablespoon Lemon Juice
- 1 clove Garlic crushed
- 1 teaspoon Parsley chopped
- Salt + Pepper to taste
Instructions
For Fish
- Line a baking pan with foil and spray with nonstick spray
- Preheat oven to 450 degrees F
- Cut fish into strips. Season with salt and pepper
- Pour buttermilk in a shallow bowl. Add the garlic powder and paprika. Mix
- Place the crushed chips and bread crumbs in another bowl. Mix with a fork until combined
- Place the fish into the buttermilk. Tap on the sides of the bowl to remove excess liquid and place the pieces in the crushed chips
- Cover the pieces with the crushed chips and tap the sides of the bowl carefully to remove excess breading
- Place the breaded fish on the sheet pan
- Spray the tops with nonstick spray
- Bake for 11-12 minutes or until the fish is cooked throughly and is crunchy
- Remove from the oven, let it rest for 1-2 minutes and place on a platter. Squeeze lemon juice on top (optional)
Lemon Garlic Mayonnaise
- Mix all the ingredients together in a bowl. Check for seasoning and add more if needed
- Enjoy!
