I am back!!!! I know I haven’t posted in a very long time and I missed writing these posts. But now….
I am happy to announce that my blogging hiatus is over and fresh new recipes will be posted on Living Sweet Moments in time for the Holiday season! yay!!
I started with this amazing moist pumpkin loaf recipe that took me a few tries to perfect. I am aware of the hundreds of recipes on the internet and tried a few. Some were dry, others too sweet, others needed flavor, etc –
So I decided to develop my own using the attributes that I love in these types of recipes.
I love the deep flavor of the spices combined with the pumpkin. Serving a slice with a cup of coffee makes it the highlight of my day.
The loaf is soft and moist, just the right amount of spicy, and not too sweet. The cream cheese frosting is completely optional. There were divided opinions in my house.
My daughters loved the loaf as is while my husband asked for a frosting. So it’s up to you if you want to add it on or simply skip it altogether.
The crystallized ginger gives it a different dimension in flavor but it is also completely optional. Don’t you just love customizing your recipes to suit your specific tastebuds?
This recipe is very easy and only requires 2 bowls (one for dry ingredients and one for wet ingredients). No mixer, grater, or special tools are required. A whisk or spatula will do.
If you’re skipping the frosting then no bringing up ingredients at room temperature either.
As you can see, it does not get any easier than that. So don’t even think about it, gather the ingredients, and let’s bake! I’ll bring the bowls and loaf pan. You bring the rest 🙂
You’re welcome to add nuts, pepitas, or chocolate chips to your batter.

Moist Pumpkin Loaf Recipe
Ingredients
For Pumpkin Loaf
- 1 cup Pumpkin Puree
- 1/2 cup Vegetable Oil
- 1/3 cup Heavy Cream
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 tablespoon Pumpkin Spice
- 1 cup Brown Sugar
- 1 1/2 cups All Purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
For Cream Cheese Frosting (optional)
- 4 oz Cream Cheese room temperature
- 4 tablespoons Butter room temperature
- 1/2 cup Powdered Sugar sifted
- 1 teaspoon Vanilla Extract
Garnish (optional)
- Crystallized Ginger
Instructions
- Preheat Oven to 350 F
- Grease a loaf pan with nonstick spray
- In a bowl place the dry ingredients: flour, sugar, powders, pumpkin spice and salt. Whisk lightly to combine
- In another bowl place the eggs, pumpkin, oil, vanilla and heavy cream. Whisk to combine
- Add the dry mix into the wet mix and whisk together being careful not to overmix
- Pour batter into prepared pan and smooth out the top
- Bake for 40-45 minutes or until a skewer inserted in the middle comes back clean
- Remove from oven let it cool in the pan for 10 minutes before unmolding and cooling completeltyon a rack
For Cream Cheese Frosting (optional)
- Mix the cream cheese, butter, sugar, and vanilla into a bowl using a spatula until the mixture comes together into a smooth frosting
Assembly
- Spoon the frosting on the top of the loaf and sprinkle the crystallized ginger
- Refrigerate for 30 minutes or until the frosting hardens slightly
- Enjoy
