Baked Chicken Taquitos

These chicken taquitos are so delicious, that you can’t eat just one. I serve it with a mild avocado sauce that rounds up the flavors nicely. If you’ve never made tacos before, don’t worry!

They are super easy to make and you can even use leftover chicken from the night before. I honestly didn’t have the time to cook mine so I used rotisserie chicken from the Supermarket.

These baked chicken taquitos are crispy on the outside and creamy and savory on the inside. Since I am making it for my whole family, I omitted any kind of spicy pepper.

Perfect for my picky kids who ask so many questions when they try new foods. Let me tell you that these taquitos are 100% kid-approved.

The inside of the taquito has a delicious salsa verde made with tomatillos. I used my favorite store-bought brand: Herdez. The same sauce I made my Chicken Enchiladas. Those enchiladas turned out to be very famous in my household. We made it tons of times ever since.

Now that my girls tried these baked chicken taquitos, they are hooked! My 8-year-old preferred without the sauce, but my 6-year-old was dipping them like crazy.

Since they are baked until crispy, they are sturdy and perfect for dipping. My husband who was sick at home today ate about 5 of them in one sitting.

The process is fairly simple. I place cooked chicken pieces in a food processor and when it is fine I add it to a bowl with Salsa Verde, cheese, cilantro, and other ingredients.

Then I roll the filling into the tortillas and finally, I bake. Easy, peasy, lemon squeezy. You can even make the chicken part in advance and then roll them at the last minute.

For these chicken taquitos, I used white corn tortillas. You can also use yellow corn tortillas or even flour ones. Just make sure to use corn if you’re serving guests with gluten allergies.

Ingredients

  • 2 cups Cooked chicken
  • 1/2 cup Cream cheese softened
  • 2 Tablespoons Cilantro chopped
  • 1/2 Cup Salsa Verde
  • 1 Cup Shredded Mexican cheese
  • 12 corn tortillas
  • Salt + Pepper
  • Cooking Spray
US Customary - Metric

Instructions

  • Preheat oven to 425 degrees Fahrenheit
  • Chop chicken into bigger pieces
  • Place the chicken pieces on a food processor and process until minced
  • Place minced chicken in a bowl
  • Add the cream cheese, salsa verde, salt, pepper, cilantro, and cheese. Mix well with a wooden spoon
  • Add a small amount of filling into the lower third of the tortilla. Roll them tightly into a taquito
  • Repeat with remaining tortillas
  • Place the tortillas on a rectangular baking pan snuggled tightly
  • Spray tops and sides with nonstick spray
  • Bake for 10-15 minutes or until tortillas have crisped up
  • Serve with Avocado Crema
