Chestnut Ice Cream Recipe

If you think chestnuts are only for roasting on an open fire then you are in for a big surprise! This amazing Chestnut Ice Cream Recipe has a delicate nutty flavor and is made with chunks of marron glace (candied chestnuts) perfect for a fancy summer dessert.

With only 5 ingredients, all you need is a mixer and a freezer, no ice cream machine required. Every creamy spoonful of this Chestnut Ice Cream Recipe will transport you back to France. I added a bit of rum extract to highlight the soft and delicate flavor of the chestnuts.

On December I made a Chestnut Meringue cake using a few can of pureed chestnuts my friend Adriana has given to me. I loved the flavor so much that I wanted to make something different and exotic for the summer. This ice cream hit it out of the park in terms of flavors and texture.

You can purchase chestnut puree online or a specialty gourmet store. I found mine in a Russian store here in Miami. Marron glace is easy to make at home or you can also purchase it on Amazon if you can’t find fresh chestnuts or you’re strapped for time.

Ingredients

  • 2 cups heavy cream chilled
  • 17.5 oz chestnut puree 1 can
  • 1/2 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 1 cup marron Glace Chopped

Instructions

  • In a mixer, whip the heavy cream until creamy
  • Add the extracts and the chestnut puree
  • Remove from the mixer and fold in the marron glace pieces with a spatula
  • Place the ice cream on a rectangular baking pan and freeze for 4-5 hours
  • Enjoy!

Notes

*You can add regular rum instead of an extract if serving only to adults. I added a full teaspoon since I love the flavor but if you don't, just add 1/2 teaspoon

    YUM!. Thank you for this recipe. I did use it as a base but instead of Rum which I didn’t have I used Kahlua and I added cocoa powder to the icing sugar. To make it vegan I used coconut cream which had been chilling in my fridge. The bowl got licked before it went into the dishwasher.
