I have a soft spot for scones. I love eating them for breakfast and with afternoon tea. You probably saw my classic English scones recipe from a few weeks back and now I bring you this fall version. Cinnamon and cranberries make a delicious combination of flavors and textures. By the way, you won’t believe what the secret ingredient inside these scones is.
These Cranberry Cinnamon Scones just melt in your mouth! they are so tender and delicious. Serve it with clotted cream, Crème fraîche, and some jam for a tasty and decadent treat. They are super simple to make. You don’t need special molds or cutters, just use a spoon or free-form them. That’s the beauty of this recipe.
So let’s see how the process of making these Cranberry Cinnamon Scones is made.
We start out by putting all the dry ingredients together in a bowl and then the wet ingredient (aka secret ingredient) in another one. Don’t worry about the cranberries, they are mixed in last.
Mix the wet into the dry and mix until combined. The secret to a tender scone is to avoid overmixing the dough. With a few movements of the spatula, you should be set. Finally, fold the cranberries in.

Cranberry Cinnamon Scones
Ingredients
- 2 Cups Vanilla Ice cream melted
- 1 1/2 Cups Flour all purpose
- 1 1/2 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1/2 Cup Cranberries dried & sweetened
Instructions
- Preheat oven to 350
- Combine first four ingredients into a mixing bowl. Using a hand mixer, mix all ingredients together until very well combined. Approximately 2 minutes. Dough will be very sticky.
- Fold in Cranberries and mix thoroughly
- Drop onto a parchment lined baking sheet. Makes approximately 8 scones.
- Bake for 15 minutes. Broil for the last 2 minutes until golden brown.

yes! try 1 1/2 cups of heavy cream (add more if dough is too dry), 1 large egg, and 3 tablespoons of sugar
