Crunchy Berry Compote
If you’re a huge fan of berries like me, then bookmark this recipe. It’s easy, delicious and very versatile. This berry compote can be served warm or cold and can be paired with a variety of food items: toast, muffins, cakes, yogurt parfaits, etc. I added some crunch on the top to play off different textures.
I don’t know about you, but for me the perfect breakfast is always a bread of some kind. a flavorful spread and cream cheese. Best combination ever. And instead of buying an expensive jar, I make my own berry compote. Aside from the simplicity, you can control your desired amount of sweetness. In this case, I used strawberries and raspberries. Both are tart with a hint of sweet.

- 2 Cups of Strawberry sliced (fresh or frozen)
- 2 Cups of Raspberries whole (fresh or frozen)
- cup Juice of 2 Oranges approximately 1/4
In a heavy bottomed saucepan, place all the ingredients and heat over medium high heat
When mixture comes to a boil, reduce the heat to medium-low and mash the fruit with the help of a wood spoon
Cook for 10-12 minutes
If mixture is too tart, add in a few spoonfuls of sugar or sugar substitute
Remove from heat and let it cool
Serve warm or cold
