Diabetic Lasagna Recipe
Get ready to drool because this amazing Diabetic Lasagna Recipe is delicious, creamy, meaty and so easy to make. You’ll notice that a few ingredient swaps make this lasagna lower in fat, calories, sugar, and salt.
I got a few emails last month regarding diabetic dishes so I decided to do a little research and came out with this delicious Diabetic Lasagna Recipe. I used ground turkey breast instead of beef, I also used part skim mozzarella cheese, fat-free ricotta cheese, and whole wheat pasta.
These changes made a difference in calories and fat, but definitely not on flavor. My husband and mother in law had no idea! They loved it and devoured it. Serve it with a nice green salad on the side and you have an easy and delicious full meal.
You can make this Diabetic Lasagna Recipe in advance and just bake off at the last minute, you can also freeze it before baking and it goes straight from the freezer to the oven. Perfect for last minute guests or for weekly meal planning.
What I did is made a double batch. One lasagna I froze and the other one I baked. Who doesn’t love easy meals that are also healthy and diabetic friendly?
A great time saver was the oven ready whole wheat lasagna noodles I found at Amazon. If you can find it at your local grocery store, it will save you time because you don’t need to boil your noodles in advance. If you can’t find it, it’s ok. Just boil it, place it in cold water and drain when ready to use.

Diabetic Lasagna Recipe
Ingredients
- 1 1/2 lbs ground turkey breast
- 1 large onion chopped
- 2 cloves garlic minced
- 28 oz can of crushed tomatoes with NO SALT ADDED
- 3-4 leaves basil chopped
- 1 teaspoon dried oregano
- 9 sheets of Whole Wheat Lasagna Noodles
- 15 oz fat-free ricotta cheese
- 1 egg
- 2 cups part skim mozzarella cheese shredded
- 2 teaspoons olive oil
- Salt + Pepper
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Cook noodles according to package instructions*
- Drain and place in cold water to stop the cooking process
- In a large skillet, heat the olive oil
- Add the onions and saute until softened
- Add garlic, 1/2 teaspoon of oregano and half of the basil
- Add the ground turkey and cook while breaking up the big pieces into little ones
- Drain excess liquid and add salt and pepper
- Add the tomatoes and cook until the mixture starts boiling. Remove from heat
- In another bowl, mix the ricotta cheese, egg, salt, pepper and the other half of the basil
- Drain noodles
- Place 3 noodles in a 9x13" rectangular baking pan in a way they cover the bottom of the pan
- Add 1/2 of the turkey mixture. Spread evenly
- Add 1/2 of the ricotta mixture. Spread evenly
- Sprinkle some cheese
- Cover with 3 more lasagna noodles
- Spread the remaining turkey mixture
- Spread the remaining ricotta mixture
- Sprinkle some more cheese
- Cover with 3 more lasagna noodles
- Sprinkle with remaining cheese and dried oregano
- Spray a piece of aluminum foil with nonstick spray
- Cover lasagna with foil
- Bake covered for 45 minutes
- Remove foil and bake for 10 minutes
- Broil for 2 more minutes or until the top is brown
- Remove from oven and let it rest for about 10 minutes before serving
- Enjoy!

Hi Dianne, with this recipe you can get approximately 10 servings. According to https://recipes.sparkpeople.com/recipe-calculator.asp each serving has 37.7 g of carbohydrates and 338 calories.

30 carbs is high. Not very diabetic friendly

Actually 30 carbs is very diabetic friendly. The recommended carbs for a diabetic meal is between 45& 60 grams per meal. That is what my endocrinologist & dietician recommended me, when I was diagnosed earlier this year

Sorry but its just not the carbs the chlorestol is 74 mg. Your on the right track but something has to be omitted for this recipe to work for us DIABETICS. The rest of you will be fine!😀

What kind of whole wheat noodles did you use? I have only been able to find whole wheat noodles with 38 carbs per serving. My entire meal has to be less than 45 carbs.

It is diabetic friendly….but for some of these comments to you, well I would think someone with diabetes would realize that any lasagna is going to be diabetic friendly. Hello?
