Now that the weather is getting chillier I am craving comfort foods. Honestly, in Miami, we still haven’t felt the cold yet but at least there’s some breeze and no more humidity. To me, that’s a big improvement from last month.
Weekdays are hectic around here. My daughters have afternoon activities plus homework. Finding the perfect time to cook a full dinner is getting harder every day so I come out with these great solutions that are fast, simple, and delicious.
I love using Provolone in my sandwich, but you can certainly use any cheese you may like. My husband sometimes likes it with cheddar so I change it up every once in a while.
You can chop your veggies beforehand or buy them frozen if you’re really in a pinch. I use a mandoline to slice them thin but if you don’t have one don’t worry, it’s not necessary. And don’t forget the hoagie rolls!

- Season the meat with salt and pepper. Add the worcestershire sauce and stir once more
- Mix in the vegetables with the meat
- Open each roll lengthwise, add the meat mixture
- Put 2 slice of provolone cheese on top of the meat and put it in the oven on a baking sheet until the cheese melts

I loved this recipe. It was so simple. I had leftover Pork Tenderloin, so i used that instead of the beef. It was amazing. What a great way to use leftovers. I am keeping this recipe. Thanks!!
