Garlic Butter Skillet Chicken

Now that school is finally back in session, I am always looking for easy dinner ideas to all the family will love.

This easy and quick chicken recipe requires only one skillet and a few ingredients that most of us have in our pantries. All you need to do beforehand is to defrost the chicken breasts.

Serve with rice, veggies, or mashed potatoes and this garlic butter skillet chicken will be a hit. If you don’t have any of those on hand, a side salad will suffice.

Ever since we started limiting the amount of meat we eat every week, I’ve been focused on using as many chicken parts as possible. One day breasts, other day drumsticks, and so on. If one doesn’t get creative it gets tiring after a while.

I cannot believe this year my oldest is starting 8th grade and my youngest 6th. Where has the time gone? Both in middle school and next year high school! When Living Sweet Moments was born, they were both in preschool.

  • 1/2 teaspoon dried basil
  • 1/2 teaspoon parsley

  • 6 tablespoons butter (melted)
  • 2 cloves garlic (minced)
  • 1 tablespoon avocado oil
  1. Preheat oven to 400 degrees F.

  2. Season both sides of chicken with paprika, basil, parsley, salt and pepper.

  3. In asmall bowl, mix together butter and minced garlic

  4. Heat avocado oil in a cast iron skillet over medium-high heat. Once pan is heated through, add chicken and cook for 1-2 minutes each side.

  5. Pour garlic butter sauce over the chicken and place the skillet in the preheated oven. Bake for 15-25 minutes depending on the size of chicken breasts. Chicken breasts should get to an internal temperature of 165 degrees F.

  6. Remove skillet from the oven. Use a spoon to pour the garlic butter sauce from the pan onto each chicken breast before serving

This recipe makes plenty of this liquid gold garlic butter sauce. It is delicious poured on the chicken after plating, but also poured onto an accompanying side of mashed potatoes.
