This tasty maple Roasted Peach Salad recipe is served with greens, tomatoes, almonds, parmesan and almonds, then tossed with a tangy maple vinaigrette.
Maple Roasted Peach Salad
While people in other places may be sipping pumpkin lattes, here in Miami it’s 90 steamy degrees outside. We’re simply not ready to give up on Summer. So let’s have some yummy Maple Roasted Peach Salad and leave the pumpkins for October.
I was cruising through Safeway today and saw these delicious white peaches on sale. They are sweeter and have a more delicate flavor than the yellow ones. Usually, I roast them, grill them, or just eat them as a snack.
When I make salads, I love adding fruit and nuts. When you roast it with a little olive oil, salt, and pepper, it brings out their natural sweetness and makes them tender.
My husband usually places them in the fridge for a few hours and mixes it with frozen grapes. The contrast of flavors and textures is awesome.
The vinaigrette used is a maple mustard one. It has few ingredients and it’s sweet, tangy and so delicious. I always keep a small bottle in my fridge whenever the mood strikes.
Behind this Maple Roasted Peach Salad, is a great cause. You see, Safeway supermarkets all over the country are launching Hunger Is Campaign.
To participate just buy products from these brands during the month of September and automatically Safeway will donate 10 cents per item purchased. Their goal is to earn $1 million.
Personally, I used Safeway’s organic brand for the cranberries and the green mix to participate in the program.

Maple Roasted Peach Salad
Ingredients
For Maple Roasted Peaches
- 2 peaches
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- Salt + Pepper
For Salad
- 15 oz Baby greens
- 1/4 cup toasted almonds
- 2 tablespoons dried cranberries
- 1/2 cup cherry tomatoes
- 1/2 cup cucumbers
- 1 oz parmesan cheese

- Salt + Pepper
- Vinaigrette
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons maple syrup
- 2 teaspoons dijon mustard
- Salt + Pepper
Instructions
- For Maple Roasted Peaches
- Preheat oven to 400 degrees Fahrenheit
- Cut peaches in half. Remove the pit and cut into slices
- In a bowl toss the peaches with the maple syrup, olive oil, salt and pepper until the peaches are completely coated
- Spread peaches on a greased sheet pan and roast for 15 minutes
- Flip the over and roast for 15 minutes more
- Remove from oven and let it cool for a few minutes
- In a small bowl, place all the vinaigrette ingredients together and mix vigorously using a whisk
- In a salad bowl place all the salad ingredients and slowly add the vinaigrette until your desired flavor is achieved (you may not need all the vinaigrette)
- Serve and enjoy!
